Virtual flow model overrides

Per-request model overrides now apply correctly when executing virtual flows, so dispatch-time model settings match what you pass from the SDK or API.

Virtual (dynamic, runtime) flow execution now honors model overrides from the request path end-to-end.

If you swap models for cost, latency, or experimentation, virtual runs behave like saved flows with respect to which model actually executes.
